小蘇打 (Baking Soda) 10g

1. 把小蘇打平均放在焗盤上
2. 放入已預熱焗爐200度20分鐘,冷卻後才從焗爐取出
3. 倒入玻璃瓶存放

鹼水I Lye Water

鹼水與酸進行中和反應產生的二氧化碳氣體,使月餅皮口感更加酥鬆

碱麵 5g
水 15ml

I鹼水
1. 把碱麵、水倒入碗中,攪拌均勻成鹼水
